Prosperity Farm Distillery Tour
St. Croix’s newest attraction, Prosperity Farm Distillery, is the island’s only farm-to-bottle distillery. Unlike St. Croix’s rum distilleries, Prosperity Farm grows sugarcane and produces spirits made from the fresh cane juice rather than molasses, like gin and amaro. Visitors can take a 25 minute ‘Farm-to-Bottle Tasting Tour’ which takes you behind the scenes of this working farm distillery — where island-grown ingredients, local know-how, and bold Caribbean spirit come together in every bottle.

Tucked along Mahogany Road in Frederiksted, Prosperity Farm Distillery sits on a sprawling 180 acres that were once part of a historic sugar estate. As you drive onto the grounds you can’t help but take in your surroundings – the 360° view that includes the Caribbean Sea, rolling green hills, old mahogany trees, and miles of sugarcane fields. Your tour starts at The Farmhouse which has been lovingly restored using as much of the original structure as possible. The Farmhouse now serves as the tasting room and boutique for Prosperity, and it’s worth a look around just to appreciate the restoration work and enjoy the views from it’s many large windows.

The tour starts by walking some of the grounds, where you’ll learn the history of the estate and see some of the historic ruins and buildings from the original sugar estate. Prosperity currently grows seven different varieties of sugarcane, and 90% of the ingredients they use to produce their farm spirits are grown right on the property. As you tour the grounds, you’ll see the original cistern, part of the overseer’s house, stables and the carriage house. What used to be the old chapel is currently being restored, and soon will become a cafe for visitors to enjoy lunch in the beautiful courtyard area.

The tour then proceeds into the new distillery building where the small-batch spirits are crafted using the sustainable, locally grown ingredients. Here you’ll have the opportunity to peek into the open fermentation tanks, and even sample the fermenting sugarcane juice. You’ll also get to see the copper still and learn about the distillation process. Then comes the tasting!

The tour concludes back in The Farmhouse, where you get to sample the artisanal spirits, and meet the distillers, Jason and Nate, if they’re available. During the tasting you’ll learn about how each batch reflects the local soil and environment, making every spirit distinct. The result is a spirit rich in flavor, shaped by the unique characteristics of its growing region—its terroir. These artisanal spirits are typically found only in the French Caribbean, where cultivation and production are carefully regulated. Enjoy your samples, try one of Prosperity’s outstanding craft cocktails, and a buy a bottle…or two…to take home with you.
